Keri Glassman's Nutritious Life Tip: Eat Empowered

Every other week on Hamptons-Magazine.com, I’ll focus on one pillar of a Nutritious Life, and give you a Nutritious Life Tip (NLT) Hamptons-style. Last time was all about Exercise Steady, now we’ll focus on how to Eat Empowered to look and feel your very best.
Eat Empowered: You’ve heard it-“you are what you eat”, but that doesn’t apply to your jeans size only. Looking and feeling young, fresh, and beautiful is possible just by eating certain beauty foods. So, head out to your favorite Hampton’s farm stand, buy some fresh produce (think at least two green and two orange/red) and prioritize them right up there with your lotions, face masks, and scrubs!
NLT - Eat Empowered Hamptons-Style: What better way to enjoy the season’s best produce than hot off the grill? Or, by tossing together a fresh, crisp salad after an all-day beach outing? There are a variety of ways to get in your fruits and veggies this summer, so be sure to mix it up whether you are hosting a summer soiree or just snacking on the beach. My favorite beauty foods are:
Want to impress your guests AND look your best? Try these recipes:
Tomato & Quinoa Stuffed Pepper: Cut the top off of the red pepper and remove the seeds and ribs. Combine cooked quinoa, tomatoes, zucchini, basil, freshly grated Parmesan cheese, pine nuts, lemon juice, oil, and garlic. Stuff the peppers. Place peppers on foil and put on the grill, medium heat, for 30-35 minutes.
Swiss Chard and Walnut Salad: The farmers markets will be full of Swiss chard this summer, and colors will vary. Mix chard, walnuts, grilled peaches, feta, purple onion, and balsamic vinegar for a colorful seasonal side.
