The Maidstone Inn has been around for 150 years, but it was just last year that Swedish hotelier Jenny Ljungberg turned it into c/o The Maidstone and opened its ultracozy, multiseason Living Room Restaurant. The kitchen is run by Hamptons slow-food pioneer James Carpenter, and, like the inn itself, his menu is quaint and comfortable with a flair for the exotic. In addition to at least one daily special, there are appetizers such as sautéed forest mushrooms (shiitake, beech and chanterelle) with toasted brioche; flavored with brandy and served as an open-faced sandwich of sorts, it’s hearty, but not heavy. For an entrée, try the roasted rack of lamb with a basil-infused crust, served with Long Island potato purée and ratatouille.
