Tunney Vision
When it comes to noteworthy culinary experiences, John Tunney, owner and operator of Besito and American Roadside Burgers, continues to please the palates of Long Islanders. We talk to the man behind the menu.
Where and when did your restaurant career begin?
JOHN TUNNEY: I started as a dishwasher at Three Village Inn when I was 15.
What inspired you to create the theme of Besito?
JT: I have been going to Mexico for years but recently started to pay more attention to the cuisine, the warmth, the people. It is a great nation, full of life and history and close family bonds. I always missed that when I came home, so Besito was born.
Is there anything you cannot bring yourself to eat?
JT: Raw sea urchin.
Aside from your own restaurants, where do you like to eat?
JT: Food from the farm stands of the North Fork, prepared at home.
With whom would you most like to share a meal?
JT: [Four Seasons Hotels and Resorts founder and chairman] Isadore Sharp. H: What is next for you? JT: Ballo Italian Restaurant and Social Club, which opens in September. It is a 16,000-square-foot cathedral at Mohegan Sun, inspired by San Galgano in Tuscany—freshfrom- the-pantry cuisine prepared by the best hands, chic interiors, dancing on tables late night. It is a celebration of Italian culture.
