Lucy’s Whey stocks an array of artisanal cheeses.

Catena’s Market
Family owned and operated since 1890, Catena’s offers organic, vegan, and gluten-free options as well as traditional favorites such as curried chicken salad and fresh ground sirloin. The shop sells produce and cheese from the area, and this year adds bread baked with Long Island wines. 143 Main St., Southampton, 283-3456

Citarella
This marketplace began in New York as a humble fishmonger and has kept growing to now offer 30 varieties of homemade pasta and delicacies including truffles, foie gras, and caviar. The Hamptons locations sell imported and local fish, along with prepared dishes such as rotisserie ribs and steamed lobsters. 2 Pantigo Road, East Hampton; 2209 Montauk Hwy., Bridgehampton, 537-5990

Clamman
Local fishermen deliver fluke, flounder, striped bass, black bass, scallops, and lobster daily to this market, which makes legendary Bayman’s chowder, white clam sauce, and a house marinade. Clamman also caters beach parties and clam bakes. 235A North Sea Road, Southampton, 283-6669

Halsey’s Green Thumb Organic Farm
For decades, this oversize farm stand has turned out organic produce like purple cauliflower, baby radishes, and eggplant. “My three siblings and I still work the farm,” says Johanna Halsey of the 100 acres that have been in the family since 1644. Green Thumb currently carries 11 kinds of basil including cinnamon and licorice basil and 10 types of greens. 829 Montauk Hwy., Water Mill, 726-1900

Hampton Prime Meats
“We know everyone’s name and favorite things,” says Stacia McClung, whose family runs the market. They specialize in humanely raised, antibiotic- and hormone-free prime meats and a famous dry rub. The shop also carries delicacies (available by order only) like ostrich, frog legs, and Kobe beef. 235 North Sea Road, Southampton, 287-4909

Lucy’s Whey
The intimate store sells seasonal American-made artisan and farm cheeses. “Our favorites now are a stinky cow’s milk cheese called Conundrum and a pungent soft cheese called Grayson,” says manager and cheesemonger Amy Thompson. 80 North Main St., East Hampton, 324-4428

Red Horse Market
Tim McClung, owner of Tim’s Prime Meats & Seafood in Sag Harbor, revitalized Jerry Della Femina’s former Red Horse Market, crafting it into a butcher shop, deli, salad bar, and bakery. Red Horse makes its own mozzarella on the premises. “People in New York City talk about the fresh mozzarella here,” says general manager Michael Langella. 74 Montauk Hwy., East Hampton, 324-9500

The Seafood Shop
Asian slaws and grain salads are part of owner Colin Mather’s effort to lighten up the prepared foods. Fish is delivered directly from baymen, produce is local and often organic, and the Thai seafood curry is addictive. “We can’t keep it in the pot,” he says. 356 Montauk Hwy., Wainscott, 537-0633

Sydney’s “Taylor” Made Cuisine
Here, the chicken comes in many varieties—buttermilk fried, grilled, barbecued, and in six different salads—and both chicken and local duck are always spinning on the rotisserie. The guacamole is so popular you need to call ahead to reserve a fresh batch. 103 Main St., Westhampton Beach, 288-4722

Village Prime Meat Shoppe
This is the shop for quail and wild game like buffalo. The market also makes its own sausage including fennel and porcini soprasada and offers high-end oils and vinegars. “We have a full line of balsamics from $5 to $200,” says manager Michael Mattera. 495 Montauk Hwy., East Quogue, 653-8071
